Chicken and Rice de Provence

This is another great recipe for an Electric Pressure Cooker, Very easy.

  • Package of boneless skinless chicken thighs (6-10)
  • 2 cups brown and or wild rice blend
  • Medium Onion, Chopped
  • 5-6 Carrots peeled and cut in one inch lengths
  • Chicken Stock 32 oz size (Better than just broth
  • 1-2 Tbs Herbs de Provence
  • 1 Tbs Greek Oregano
  • 2 cloves of minced Garlic
  • 1-2 Tbs Olive Oil
  • 1-3 tsp salt (Depending on your taste, We use unsalted Stock)
  • 1.5 Cups of Water to bring liquids to 6.5 Cups

Chop and Cook Onion in Olive Oil until translucent. Add All other ingredients to Pressure Cooker. When Onion is ready add it to the pressure cooker. Set Cooker on high pressure for 12 minutes. It will take a short while to bring cooker up to pressure.When Cooking cycle is complete, let pressure naturally drop for 10 min and then quick release. You should then have a saucy pot of chicken and rice ready to serve with salad or anything else. We cooked yellow squash on the side.
