This is a very easy dish to prepare and one of my favorites
- One lb ground Turkey (or chicken)
- sliced onions
- pre-cooked spinach
- Mexican grated cheese blend
- Hatch Green Chili Enchilada Sauce (Medium)
- Eight Corn Tortillas
Brown ground meat (with onion if desired). Overlap 4 corn tortillas in casserole dish sprayed with Pam or similar.
Add layer of ground meat and onion, Add layer of spinach, Add 2/3 can of green chili enchilada sauce, Add layer of grated mexican cheese blend,
Add another layer of 4 corn tortillas, pour the remaining enchilada sauce on top and then add some more cheese as a final layer.
Bake in a 350 degree oven for about 20 min and then serve. The photo shows a Central Market Chicken and Green Chili Tamale. I also buy my Hatch Enchilada Sauce here.
