Baked Blue Corn Talapia with Green Chili Posole and Yellow Squash
Talapia was dipped in beaten egg and lemon juice and coated with blue corn meal. Prepared talapia filets where put in glass dish and dribbled with EVOO and baked at 350 for 15 min after which Hatch Green Chili Enchilada Sauce (Med) was poured over filets. Then filets were baked an additional 5 min.
The Green Chili Posole is simply canned Mexican Style Hominy with some of the same Hatch Green Chili Enchilada sauce poured in and then simmered until heated through. The Yellow Squash was peeled and cut and then dipped in the same egg as the talapia, coated with blue corn and fried in corn oil.
