These are introduced as a substitute for potato fries. They fit with the Sanford Plan. I have heard that Rutabagas are an alternative root vegetable for this recipe, however you would have to consider that they have a higher carb content and thus you are not allowed as many.
- 1 Jicama root
- Kosher Salt
- Grill Mates Roasted Garlic and Herb seasoning
(note that this also includes salt)
Preheat Oven to 400 degrees F. Cut Jicama into 1/4 x 1/4 inch pieces. Put in microwave dish and precook on Hi for 6 minutes. Get a large bowl and put about 2 tsp of Olive Oil, tsp of Salt and 1-2 TB of seasoning in the bowl. Put the Jicama strips in the bowl and toss until coated with seasoning. Line a cookie sheet with foil and spray with cooking oil from your oil mister. Spread your Jicama strips on the sheet and put in oven for 20-25 minutes. Serve like french fries.
